Well, after our first outing in the whole hog competition world, we didn't do that good, in fact, we can in dead last out of 18!!!!! The judges had some constructive critisism for us, but we just flat missed the mark. We used a mixture of smoke wood for that smokey flavor that all of our customers have liked so far...we that was not what the judges wanted. It is funny that the judges are an almost 180 from the paying public....Anyway, my partner just wants back out there and to do it again untill we do better in this, which was a lot of fun for him (I couldn't stay, I had to work that weekend), so he is ready. We also are ready for a KCBS comp w/ the different meats and stuff, so look for us at some of those also.
